Broil potato frittata formula

Potato frittata or prepared eggs are simple approaches to utilize extra vegetables, particularly at Christmas: simply heat brussels grows, carrots, bean stew and onion in a container, break a couple of eggs over them and pop them under the barbecue. 

Planning time: 10 minutes | Cooking time: 25 minutes 




2 tbsp olive oil 

2 onions, finely cut 

4 garlic cloves, finely cut 

1 little stew, finely cut (discretionary) 

10 broiled potatoes 

6 eggs 

20g spread 


Preheat the stove to 180C/160C fan/Gas 4. 

Warmth the oil in a huge non-stick, ovenproof skillet and sauté the onion until it begins to caramelize and get firm – a decent 10 minutes – however don't allow it to consume. 

Include the garlic and stew, if utilizing, and cook for a further four minutes. 

Hack the potatoes into pieces and add them to the onion blend, giving it a decent mix and season. 

Whisk the eggs together and pour this over the potato blend. 

Enable the frittata to begin to set around the edges at that point place the container in the broiler and cook for 10 minutes so the eggs are still delicate in the center. 

Present with a fab green serving of mixed greens or just all alone.
